It’s taken its time, but Autumn has finally arrived in Brisbane.
This means shorter days and longer, cooler nights so we’ve turning up the heat at Soleil Pool Bar with tantalising tastes and heart-warming cocktails. And as always, stay on high alert for visiting stars, as Soleil remains the hottest place for fly-ins to chill.
With our menu packed full of great flavour, we have some inside intel on some of the perfect poolside dishes this Autumn (ie. we polled our wait staff on what is in high demand!)… from the noon menu, it’s the Corned Beef sandwich and the Baby Squid stuffed with Moreton Bay Bug and saffron risotto, which is perfect to share. Once the sun has gone down, the Prawn & Basil Fritter with pineapple yoghurt, Lamb Chips with gribiche mayonnaise and the Octopus & Chorizo with grilled cucumber, rocket and almonds are the stars. So pop poolside and enjoy the warm rays and great flavours of the season.
Just as Kim and Kanye complete each other (!), our dishes are even more fabulous when accompanied by a fantastic creation from our cocktail menu!
If you’re out to impress a date or mate, try our shared cocktails. The It Takes Two To Tango, made with a delicious blend of Belvedere Pure vodka, lemon, Rizzardi Prosecco, raspberry and rose sorbet and Kiss Kiss Bang Bang, a blend of Cointreau, Peach Massenez, peach puree, cranberry juice, apple juice and is topped with lemonade, are great crowd pleasers.
